- Take the lamb out of the fridge at least an hour beforehand to bring up to room temperature. Preheat the oven to 220C.
- Place a large roasting tin over the hob with a drizzle of vegetable oil. Using large tongs sear the outside of each side of the lamb joint. Once lightly brown all over remove the meat and allow to cool for 5 minutes.
- Using a sharp knife score the lamb in diagonals. Slice a few cloves of garlic into slithers and push into the scored lamb. Use a small knife to make deeper holes in the meat if necessary. Do the same with a few leaves of rosemary. Season generously with salt and pepper.
- Place the rest of the garlic and rosemary in the bottom of the roasting tin along with the liquid. Put the lamb leg on top, baste with some liquid then place in preheated oven turning the temperature down to 190C.

- Choose the best cut. If you want a simple, lean roast lamb that's crisp on the outside and pink and juicy in the middle, go for a leg of lamb. You can buy a whole leg, bone-in, part boned or boneless.
- Add flavour. There are many ways you can add to and enhance the flavour of your roast lamb. Start with something simple like rosemary and garlic; using a small sharp knife make several small incisions in the meat, being careful not too cut too deeply.
- Get cooking. Take large joints of meat out of the fridge one hour before you want to cook them. This allows the meat to come to room temperature and it should cook more evenly.
- Baste. Basting meat while it cooks simply means spooning the juices from the roasting tin back over the meat. Take the roasting tin out of the oven and tilt the tin slightly so that the fat and juices collect in one corner.
- Check to see if it's cooked. Slow roast lamb will be cooked through and slightly falling apart due to it's longer cooking time, so the rules of medium, medium rare and well done don't apply.
- Rest. Just like beef, lamb needs to rest after cooking, to allow the juices to 'settle' back throughout the meat, making it juicier and easier to carve.
